So for example if we were playing 20 blitz games, and you started getting me into bad positions, then I'd switch to 1...e5 (sometimes 1...g6).

I had a mental breakdown while playing blitz in the 90s, I have never been super good at blitz chess but I thought I was decent, some random hustler rated USCF 1500 destroyed me and I had the breakdown.
Never tried blitz after that, just some blitz here while I am strapped to the chair.
I played against a crap 1300 player here. He got scared when I pushed my h-pawn and he started hanging everything, somehow I managed to hang all of my pieces back and then lose on time. I got triggered when he played his crappy stonewall.
Good old CRAPPY BLITZ.
Ah, that bugs me too. When they play some crap opening, and I get a big advantage, then they shuffle around like an idiot all game while I'm winning... but then I lose because of one dumb thing (at least that's what it feels like).

The basic idea is black would rather capture with the knight than bring his queen out early, and if white protects with c4 and tries to keep the extra pawn, then black gets compensation for the material with really fast development.
