You can play 1 e4 e5 just with natural moves.
It is far harder to play 1 e4 c5 or 1 e4 c6 with natural moves.
There is more theory about 1 e4 c5 than about 1 e4 e5, and it is less forgiving.

I have played the Sicilian and Caro all my life and only recently started experimenting with 1.e4 e5 and it's been crazy. 1...e5 is completely bonkers at the amateur levels. The amount of stuff you just have to 'know' is mind boggling. I have lost so many games getting blown completely off the board it's ridiculous. It definitely makes playing chess more fun, but is it worth the high learning curve? What do you think? https://vidmate.onl/

I've played the craziest opening with black for years then!
I've since switched away from 1. e4 e5, but parts of it I still like and I only switched to find other opening which might better fit my playstyle.
The thing with 1. e4 e5 as black is that you get a wide range of ideas the white pieces can throw at you. Some people will turn it sharp, others passive, others attacking, others defending, others open, others closed and you get the idea. With 1...e5 you pretty much have to be able to play a lot and fear nothing white can try. My personality adapts with this fine as I often get sharp games and a steep learning curve, but at least my games prove instructional.
I currently use the Caro-Kann against 1. e4, but no doubt that 1. e4 e5 for years has taught me a lot and that knowledge has carried over some to help me even with where I am now
