A contradiction on Bullet

Ideally, a bullet requires efficient move as limited by time, but in practice, I often slow to realize opportunities and delaying the victory. Based on experience, I can beat opponents early, but I missed one or two steps later. Why?

I love bullet chess.  It can be very addicting, but in my experience most games come down to moving rally fast and not getting check mated more than making "good" moves.
