The DNA mutated individual still capable to interbreed with the original species and inherit its mutation to their offspring. And small group of mutated offspring would create sub species and so forth.

Viruses and bacteria evolve too.
Something you would have learned about if your parents didn't keep you out of school is nylon eating bacteria. Nylon didn't exist until the 1900s, so this happened in a relatively short period of time.
