There are always ways to take the center. You just have to look for it. Also, I’m pretty sure it’s spelled, “center”.

You both fight for the center. You might not get all four squares, but you try to get as much as you can (Without blundering, of coarse).

Playing to occupy the center gives your pieces the most available moves/options before you aim to bring your major pieces into play. When both players are playing reasonably well, complete control of the center is unlikely. Instead of focusing on complete control of the center as THE goal, take what you can get, so that you give yourself the best position possible, before you move onto the next phase of the game.

Remember that the whole point of the Hypermodern school of chess is to allow your opponent to take the center so you can later attack it from the flanks, and many a grandmaster has had success with this approach.

Center is the American spelling. Other English speaking countries spell it centre. Either way, control of the central squares is a strategic imperative in chess.

"you must acquire the four centre squares to achieve a winning posture on the board"
++ 3 of the 4 centre squares is an advantage. Try to control at least 2.

"the other guy tries to take those also" ++ Of course. If both play well, both get 2.

"so what gives with this advice ?" ++ Do not let the other guy take 3 of the 4.

"how is that obtainable in a real setting ?"
'No violent attack can succeed without controlling at least two of these squares,
and possibly three. Many a manoeuvre in the opening has for its sole object the control of the centre, which invariably ensures the initiative.' - Capablanca
