Lots of people play the Sicilian. You would have to memorize some variations that way but it's doable.
The Caro Kann is pretty solid.
For white try the Italian Game.
Anything is ultimately playable but you have to put the work in for any opening if you want to get better.
French is pretty easy to understand.
