Perhaps because you play better when you have more time to think and come up with better and stronger moves but when you have a limited time you are forced to make moves faster and may not see the good moves you will on a slow game. So don't worry and play more and more standard games and you will learn more pattern and ideas and your ability to grasp the position will improve and that's when your blitz rating will level with your standard rating. My blitz rating is 400 rating points lower than my standard. I just play my best when I have time to think.
