I assume e.g. Carlsen could beat 2500 GMs blindfolded fairly reliably. Like, in a 10 game match he probably wouldn't win all 10, but he would win the match.

Carlsen vs someone like me blindfolded? It's not even a handicap really. It's like asking what if I got 4 hours on my clock vs his 3 hours... he won't even need 3 hours of thinking time to beat me so it doesn't matter. Just like he wont have to make any deep or difficult calculations when playing me so being blindfolded wont matter.

Short answer, yes.

I've seen GM Hammer beat +2300 rated players blindfold in bullet.

For those who are curious at how well top players can play blindfold chess, check out the old Meoldy Amber tournaments, where top players played each other in blindfold chess. There were occasional comedies (especially when Korchnoi, who was terrible at blindfold chess played), but there were many brilliancies too. Shirov, Ivanchuk and Anand were especially good at blindfold chess.
