1. I could be finishing my chess session or have an offline task to do - a rematch shouldn't be assumed obligatory. If a rematch was destined to be then surely we'll cross paths OTB.
2. A rematch is unfavorable because the element of surprise is lost. Your opponoent now has a better grasp of your playing style, strengths and weaknesses.
3. There's no glory to be gained by adopting or farming weak players. There's more knowledge to be gained in losing to a stronger player than winning against a weaker one.
4. I don't like the psychological aspect. The first game is with a stranger, the second makes the experience feel more personal. More likely to tilt when emotional stakes are raised. Tilting deprives opponents of the chance to play against their best.
5. It's not a fair assessment without each player starting as white but I'm aiming to assess my maximum rating under ideal online conditions. Besides, the games are randomly paired, so we'll eventually pair back up anyway. Happens frequently.

And that whole “element of surprise” excuse? Just confirms you don’t trust your own skill. You’re basically admitting you rely on luck or catching people off guard to win.
