Chess engine personality

There is a lot of chess engine available for free, but I have trouble understanding how they differ in their playstyle. For the strength they are equivalent as they all can beat me easily 😊 . Is there a way to tweak their playstyle ?

On chess.com the bot feel somewhat different and I would like to know if there is a software that allow to tweak the parameter like :

• Adjust the Elo rating
• Adjust the blunder rate and their intensity
• Adjust the level of aggression of a bot
• Adjust the mobilization of each piece ( like the bot who like to attack early with its queen )
• Adjust the type of opening played
• Ect

Ideally I would like to have something along the line of :

I want to play against an 1000 elo, using the London system, with a defensive style and favoring the rook for attacking (so not inclined to accept an exchange knight for rook)

So one software was allowing to do just this and it is not longer distributed ?

I just watch a review of chessmaster 11th grand master edition. 

This game was PERFECT!! You want to have a strong player who is aggressive with the knight you can !

Why ho why did nobody did something equivalent or even better. Like chessmaster but more evolved.  Like

I want a player of strength XXX, playing the London opening (specify line even using this database) , favoring defense/attack with those piece/drawing ect 

So 4 years latter any change? 
I was never able to make Chessmaster 11 work but I think I have found better :-)
