Maybe this is a personal thing, but I wish attacking lessons (in books, videos, etc) talked a little bit about the purpose of sacrificing a piece near the enemy king, because as a beginner this always seemed like magic, that the attacking player somehow calculates 100 different defenses and knows all his attacks will work. It really helped me understand this kind of sacrifice when I started thinking of it like a pawn break... you don't sacrifice because you're a genius calculator (at least not all the time). Many times you sacrifice because it gives lines for your pieces, just like a pawn break.
And of course, in each of your examples not only does white trade away important defenders, but he also sacrifices to remove the pawn cover. At that point it's often a matter of whose pieces have dominant access to the lines leading to the king.
In the first example's end position we might say g1-a7 diagonal was dominated by white, maybe also the c file. In the 2nd example obviously the h file is totally dominated by white. In the 3rd both the f and h files.
Conversely, if you don't have exclusive access to a line or square near the enemy king, then your sacrifice probably wont lead to a winning attack.
