Because hw wasn't five-time World Champion Legend back then? He was just another skeet Kasparov was going to blast out of the sky. No one then knew what Anand was destined to become.

Well, the world championship is only a month away...and although Carlsen isn't having his best year ever, tournament performance wise he is still gonna crush Anand imo. 

I still don't see a good reason why the previous match result would change.

Well that is a fair point, that Magnus hasn't been playing as well as usual and Anand has been playing better than he has not too long ago (maybe he is more motivated). So I don't think we can be quite as sure that Carlsen will win, but I would still favor him pretty strongly -- I still don't think Carlsen is likely to be in all that much danger (and even if he is he is good at coming back) but we'll see!

"A punchers chance" is a boxing term. Yes.

It is used to refer to a boxer, who is considered a long-shot, because he has little skill, but has a lot of power. So he could end the match with one lucky punch.

Why the OP felt the term might apply to Anand, I have no idea.

But there it is.

It turns out that Carlsen was sick for part of the match, and still won comfortably.

I saw video of one day where he acted as if he might be sick.  Didn't know anything was said about it though.

You've never heard of a phrase being used in multiple situations?

If someone said Anand was against the ropes would you have the same reaction?

I think that if Mike Tyson punched Carlsen in the...well...anywhere.... in the middle of a game then, yes, Anand would have a chance.
