No but to get good at chess you need good memory and other things like that which come from genetics

Yes it changes the brain as is creates nerve pathways as you get better at chess

Which food does most ?

In reality.. very little can change the fundamental DNA. However, people don't understand the DNA is not just a plan that the body follows. DNA is like a vast number of plans, that our cells only express part of at any different time. Different parts are sealed and locked up. This is why you can have hair cells, blood cells, and muscle cells with just 1 copy of DNA which is the same through all the cells.
The part of the DNA that a cell expresses is called the 'epigenome' and a lot of things can affect that. Such as what you're eating, how much you exercise, if you sleep a lot, etc. But very few things can alter the base DNA that each cell has.
The only things that can really mess with DNA are mutations when a new life is created, or some strong viral infections that actually insert things into the DNA or delete things. Or these secret life hacks the 2700+gms want to hide.

It cannot change your hereditary DNA sequence, but it can make epigenetics, and at the same time form new neural pathways in your brain. There are genes that are linked to chess ability, but chess cannot shape genetic code but instead it can shape cognition.
