I am playing an endgame.  I have a king and two pawns ready for promotion.  What would be the most difficult (if possible) combination I could use?

I assume your opponent has no pieces at all.  Try 2 bishop (opposite colour).  The most difficult is a King & 2 Knights!

King and two nights is not a forced mate except in a tiny set of circumstances.
