Qxd2 seems more Catalan style. Both that and Nbxd2 seem OK.

Haven't looked at a database but I think 5...Be7 and Qe7 are both played in similar positions for that reason.

Here i would.C4 andQa5 concern me. Once i have g2.nc6 helps d5 pawn, and d2n protects e4 and .c4 . I would attack white dig.g2-a1 w/ bg2,nc6 and Q. at b3.Of course this depends on black playing pc4 or nc6
