I really don't understand french defense. White can have huge control of the center?

black is breaking with c5 and f6 to undermine the white centre.

After the ornery French player disintegrates your center and takes your e-pawn a few times you'll start to understand.

Or maybe when he locks up the position and checkmates you you'll start to get it.
