Chessbase "Fritz" is horrible at adjusting engine strength based "ELO".
Their 3D chess board engine is pathetic too.
What is nice about their GUI, is you can install other engines in a snap. Installing a weaker engine is your only good option here; as already suggested above.
Another option is ChessKing. Form my experience, this product seems to do better job adjusting based on "ELO". Just cannot install other engines.
With the Chessbase products try playing in "Friend mode", this might give you a better game. It should adjust to match your performance. Sort of like playing someone equal to youself. Sort of...
