If I remember correctly, I once read a science fiction story about someone trying to stage a match between a Morphy simulation and a Staunton simulation.
Chess engine immitating playing style of Morphy

Chessmaster had a Morphy personality that used a Morphy opening book. Probably its most important personality setting was a very high mobility value.
There are quite a few aggressive, sacrificial engines that would probably be close to Morphy's style, as long as you supplied a Morphy-like opening book for your GUI to use. You could go to the Talkchess forums and do a search in the General Topics forum for terms like "aggressive engine" or "sacrificial engine" and probably get a lot of suggestions.

Here's two additional engines I don't think I've tried.
1) Rhetoric (must set material value to 50 percent.) Site is in Spanish. http://www.chessrhetoric.com/
2) Gambit Fruit 4bx (You can increase "Piece activity" and "King attack" settings.) http://kirr.homeunix.org/chess/engines/Jim%20Ablett/
