how do I prevent the knight forks that keep happening against my king/queen and rooks?

It seems to happen every game and I can't avoid it. I don't want to just move a3/h3 or a6/h6 every time my opponent brings their knight out because I feel it just wastes a move but should I do this just every game from now on when they get the opportunity?

Moving a3/a6 or h3/h6 isn't always bad as it can prepare another pawn push or create a luft for your king with gain of time. Now, as a trick to avoid knight forks, you want to move your pieces so that your major pieces and the enemy knight are not all on the same colour complex (light/dark squares).

In the above example, notice that the white queen and the black knight are on dark squares. Thus, White plays Kd3, adhering to the principle that you should keep your pieces and your opponent's knight on differently colored squares to avoid forks.

Judging from your recent performance, you would greatly benefit from more tactics training. You still miss mates and free material. Also, immediately sacrificing a piece on move 3 isn't going to help you at higher ratings.

if you're talking about the fried liver, then when he moves the knight just move the queen's pawn 2 squares and it will block the bishop.   Then if your opponent takes the pawn then take with the knight and now the knight is blocking the bishop and the knight is protected by the queen.
