You don't. The amount of points you gain or lose is dependent on your current rating and RD value, your opponent's current rating and RD value and the result of the game.
You can limit the ratings you play. When you create a custom seek you can define how far over and under your current rating you would like you opponents to be. Just change those values to closer to your rating and you should gain/lose fewer points (assuming stable ratings, low RD values).
