Yes, the principle of material is important, but you have to ask yourself if it's safe to take the pawn or piece. Heck, sometimes I even ask if I can get away with leaving something hanging!
Bishops are generally stronger than knights as they control more squares, it's easier to open a position than close it, and two bishops can mate a king whereas two knights can't assuming no pawns are on the board. There's a two knight mate that requires one knight to blockade a pawn, it's a very tough mate to pull off too where the opponent runs in a semi-circle but you push him back with king and knight repeating the process. Knights are sometimes stronger, but then again they're stronger than rooks in very specific circumstances. Generally, bishops are better, they cover each other's weaknesses.
