How often do you play gambits

Rarely.
I will occasionally play a Danish or Nimzowitsch Colorado Countergambit, but mostly just stick to whatever sound openings I'm working on.

A lot. I play a lot of gambits to improve my understanding of chess. Colorado gambit is fun, just because a lot of 1400 ~ 1800 level players decline gambits out of habit, and it is one of the few gambits that you play hoping it is declined.

Rarely, but I used to play the King's Gambit a lot during my time in the land of the triple digits... it didn't go so well for me 50% of the time.

A lot online, almost always OTB. vs french defense/ sicilian/ caro kann, wing gambit! vs 1...e5, halloween if possible. Can also play gambits with 1.d4, like blackmar–diemer against 1...d5, or whatever 1.d4 Nf6 2.g4!? is called.
Also gambits as black! against e4: e5 Nf3 d5 elephant gambit! 🐘 against d4: e5 dxe5 d6, englund gambit! theres also From's gambit against 1.f4 (1...e5 2.fxe5 d6) or Bellon gambit against the English (1.c4 e5 2.Nc3 Nf6 3.Nf3 e4 4.Ng5 b5!?)
halloween and englund are probably a bit unsound, and 1.Nf3 g5? 2.Nxg5 e5 I'm even too afraid to play OTB (black does get a bit more space in the center, but its often not worth the pawn), but they all give good attacking chances in a sharp, tactical game. Keep gambits alive! They're fun to play! 😁
