Here's some real advice. If she doesn't want to play, don't force her.
Refuse to have *** with her until she does.
Are those three asterisks some sort of rating system for performance and effort in bed?

I would imagine you'd have to marry a woman that plays chess. Perhaps a WGM or WCM or something. Chess is for some, not for others. It has properties which appeal to the ego 80% of the time and as such it attracts a particular type. That's not an absolute of course. The point is that you can't force someone to play and like chess if it's not for them.
You should be alarmed that she started crying in that context. Sounds as if there's bigger issues than chess.

Teach a gf how to play chess ? If your gf tolerates your chess, DON't Press your luck. Chess usually competes with a gf. And if she marries you, take up gardening. Your marriage will be much happier.

To answer OP, you don't *make * your girl play chess. It has to be achieved through mutual understanding and you're not allowed to force it upon her without consent. Remember that a no is a no, but a yes is sometimes not a yes. Be careful, and don't be a chessist like OP and make your girl cry.
