How to win in this position as black

You cannot win that: it is a known draw.
You can win the pawn, but then it is stalemate with the king in the corner.
With an a-, c-, f-, or h-pawn it is a draw.
With a b-, d-, e-, or g- pawn it is a win. The method is to force the king in front of his pawn with the queen and then advance the king until checkmate.

But how to remember that?

That is not hard to remember. It is logical.
With a, c, f, h pawn there is stalemate, with b, c, e, g pawn there is no stalemate.
