"Bullet" is used to describe really fast games. Each player typically has 2 minutes or less for the whole game.
The tricks take advantage of the reduced reaction time. If your move surprises your opponent, you can force them to use a few extra seconds. If they completely ignore your move (because they're trying to play very fast), sometimes you can immediately win some pieces.
On other sites you can right click to cancel a premove. I think on chess.com that works too? Not totally sure though.
