Start a new long game and select ''Infinite Analysis'' in the ''game'' menu.

funny comment... but seriously, is it possible for two humans to play chess using fritz 11 on the same computer?

Turning off the engine should work..haven't reinstalled since I formatted last so can't test it, but that should work fine. ie start a new game then in the menu with the engine options there's one that's turn off engine (sure of it).
This happens to me a lot too. Often I'll think the engine is turned off and I'll make a move and Fritz will make its reply. Try going to Engine>Switch Off Engine (or something like that, I have Fritz 10, not 11).

The second options looks to be "Switch off Engine." as other's have suggested, this would be best.
Also If you can't get it to work there are plenty of other free GUI's out there that allow you that capability.

I know for a fact that turning infinite analysis on works.
