Well bullet and blitz are 2 different time controls. I have a similar problem. I can beat 1500-1600s in rapid but im struggling against 1200s in blitz
I keep winning bullet games but struggle in blitz. Any ideas?

Just play like you do rapid in the opening and middlegame and like bullet in endgame

I just get comfortable with certain openings and then run my opponent on the clock which makes the game easier for me
I run 3 0 dont blunder stuff in one or try not to and just play for win in blitz youre fine if you dont give out free stuff its okay if you dont see a win just go for flag
I usually always run h3 at some point for good habits to prevent backrank most of my peices are defended by pawns I run c3 qc2 most games c3 prevents nb4 harrassing queen and only take it off that file if they go rc8 but as a 700 blitz you will always see free stuff as long as you play solidly even passively you will win your games
How can I improve my blitz gameplay? I feel confident in bullet and rapid, but in blitz I continually struggle. I'm not even sure what to ask for help on but am just wondering if anyone has any ideas or has struggled with a similar problem. I play IRL and have just come back to chess.com and have been facing 1500 elo in bullet confidently, but am losing to 700s in blitz...
