Nxe5 is not "interesting". It is dubious at best and a blunder at worst.

I don't ever play the Four Knights with either color, so I don't even have to worry about that trash. After 1.e4 e5 2.Nf3 Nf6 3.Nc3 (or 2.Nc3 Nf6 3.Nf3), I play 3...Bb4!.
