Why do I have 3 diferent ratings on ICC in 5-minute?
There will be a few columns of numbers. Only the first number (in the "rating" column) is your rating.
In the rows, there are the categories "5-minute" and "blitz."
"5-minute" has some special rules that make it a little harder than "blitz." Your opponent is random (so you can't boost your rating by winning 20 times vs the same player) and disconnect is an automatic forfeit.

Why do I have 3 diferent ratings on ICC in 5-minute?
Maybe:
1. You played the 5 minute pool (Pools have their own ratings)
2. You entered 5 in the seek interface (Blitz 5 minutes entered in a seek will give a blitz rating, which may be different than the pool rating).
3. Not sure why you would have a 3rd. What is your ICC name?
