BOBBY FISCHER he's the first ever 2700+ player ever, he was knowledgeable about sports like baseball, tennis etc, he had an interesting personality, was a genius with an 180 iq and had a sense of humor. I've read 3 of his biographies and he sounds the most interesting... I'd ask him about the 1972 championship and about Spassky. I'd also ask him how he got to be so good at a young age.
Second would be Garry Kasparov because he also has an 180 iq as well and was the first 2800 plus, that I know of. He also is politically active and Russia and we could discuss that at dinner too!

i wouldn't go to dinner with someone just because he/she is a chess player. i'd hate to talk about chess over a meal.

going with Capablanca might not be a good idea, the restaurant would fill up with dogs and it would be a challenge to keep the skeleton upright on the chair.

I'd pick someone who has an endless supply of stories and amusing anecdotes. Andrew Soltis and Jeremy Silman are the two that immediately come to mind.
