Official usually means an elite stamp of approval or institutional recognition. For example months ago we may have called Carlsen the unofficial world champion since Anand was the official title holder yet it's obvious that Carlsen is the best.

I don't think I'd be offended by being referred to as unofficial. Some governing body has not/yet to recognize a person and their skill set. Even to be referred to as unofficial, at least people are talking about you eh. I tend to look at your question more as a question of status maybe. Dunno eh lol, I wouldn't be offput by it.
Honestly why are some things unofficial compared to official ? Is it because the later draws a bigger process or has set process in how someone should go about obtaining a title ? When Paul Morphy or Philidor where at their height and dominated there eras respectively would it have been rude to tell them that their unofficially the strongest ? Yes so why do people refer to them as such in a usual (not always) belittling manner ? If I want to be officially recognized as a clubs or even a nations strongest player so I go about beating the top ten or so in matches of that nation that today would still be considered unofficial but enter that nations championship win all but 2 games (draws) but someone else's wins all their games but luckily draws against me so they win the tournament why is it suddenly that their now in the books forever and I now get to be remembered for awhile then completely forgotten ?
