Is greed good during development? What are your thoughts on capturing free pieces and pawns or trading pieces or pawns during development?

my understanding is that the rule about never moving a piece twice in the opening gets tossed to the curb if your opponent hangs a piece. if it's free, take it! (that's from reading Silman... i'm not very good)
