Game drawn by timeout vs insufficient material
I thought it might be a win for black due to the fact that white has a pawn and the queen

You can't checkmate with a bishop, but the opponent ran out of time and can't checkmate you anymore. I guess you could think of running out of time as not being able to move: and if your opponent is able to checkmate you you lose, otherwise it is a draw
But if I had a knight it would be a win? In theory, it should be a win because you can checkmate with one knight if there is still some material on the board by your opponent.

There is no knight on the board. You cant make up pieces and think its a win.
I'm pretty sure that this is the win also. I was referring to only one knight without the bishop. This should still be a win because in certain situations I would be able to deliver mate.

Not here. The site only looks at the material the side with time has and a lone knight, a lone bishop, or two knights are considered insufficient.

As everyone else pointed out, it's just the site ruling.
Almost everyone here agrees that Black can actually perform a checkmate with cooperation by White.
