Idk which is better. The bishop or the knight during gameplay. Help me decide!

It completely depends on the position. In closed positions, the bishops are often strongly restricted. If a knight is on an active square then, it is likely the better piece. But in open positions (which it looks like you like), the bishops aren't equally restricted, since there are fewer pawns in their way. That makes their "long-range sight" more meaningful, and that means that bishops are usually better than a knight in open positions, unless the knight is on a very strong square or participates in an attack. Then the knight can be stronger even in an open position. My tip for you (that I think should work perfectly until about 1500 (I'm not a coach so take it with a pinch of salt.)), is that you shouldn't trade a bishop for a knight if there is no specific reason to do it.
