when im sparring with someone lower rated i make it a theametic were the opening is something i rarely come across which takes away the experience advantage and depending on how much lower rated they are ill let them use a database to a certain # of moves and as much as 4 chances to take back thier moves all this varies depending on the rating gap. Willing to do the same ? this way i get a good challenge out of my lower rated opponent which of course makes for better postmortems.
