How do you play after Qxh1? White has 2 pieces for a rook, and the queen is isolated from his pieces. And black loses his initiative that he probably sacrificed the knight for.

Why did he resign? Because the king has no good moves, and even if it had, his opponent is a GM who would never make a mistake in such a simple position.
Your move, Kg3 loses on the spot due to Qf2#. If he goes to the first rank he loses the a5 bishop. If a GM resign then it has concrete (probably tactical) reasons and you can find the moves easily.
