There are servers around the world, for random pool games. What server you connect to depends on you and your opponent's location. You may see greater lag in some regions than others.
There are some things you can do on your end to minimize connection related issues.

Beyond those things, it's possible that there's lag between you and the site server you connect to, and that's not something the site has influence over
