You should try using the fried liver attack. I've used it a lot and it's been very successful.

I've always found it very difficult to play chess in a nutshell.

re: white's position, ideally a knight on the 3rd rank doesn't block a finachettoed bishop. When it does, it needs to move again later in the game.

Of course c3/f3 are typically the knight's best squares, and if you put them both on the 2nd rank they'd block the center files, so all things considered, in a double finachetto system you'll usually leave one of the bishops unblocked.
