Need help beating my dad at chess

Hello people! I know this is a weird one but I've started playing recently and I am really enjoying improving at this fantastic game.

Now, me and my dad play chess every now and then, and he used to play quite a bit but not so much now, even though I play nearly every day try to learn openings and do tactics he always seems to beat me. Even with white he tends to play this hyper defensive approach where he plays... 1. e4 1.e5 2.Nf3 2.Nc6 3.Bd3. He then proceeds to plop 2 Knights next to his King (one on f3 and one on g3) and launches an attack on my kingside using the Queen. He proclaims proudly it's almost impenetrable and I want to prove him wrong because he plays such a weird opening, but I just don't know how to exploit it (he also like to close the position and trade off his bishops). Can anyone offer me advice to beat the first boss of Chess?
