You should play a game where you and your opponent agree beforehand that neither side is allowed to castle.  Quite interesting.

Actually castling isn't necessary in evey game. It can even be better not to castle in a lot of games.

Yes but here it isn't an option for either side. It's not just one side staying in the centre.
