In my experoence these sorts of endings are often played out until 1 move before checkmate.

Maybe your opponent wants to hold on to there rating a little longer. After losing to you, they may drop under a rating they dont want, or maybe a team match is about to start elsewhere and if there rating drops they wont qualify. Theres many reasons why people hold out when the game is lost.

its a tactic worth trying. 

but how would you know if that was the case.

Morality is another side of the plate but calling someone Noob like a whiny sissy, such people deserve to wait.

I'll never understand why some players get so bothered by having to play out their "clearly won" games. Afraid they'll blow it in the endgame maybe?

Because for positions like that you could set up conditional moves all the way to queening.
