so I just realized that a pinned knight(on e5 pinned by a rook) can still guard a piece from being captured by a king, even tho it cannot actually leave the pinned square. idk how I feel about this...lol, anybody else run into that?

Think about it this way: the pinned piece can capture the enemy king before the enemy can counter. For example, this position:
If Black captures the pawn, then the White knight would be able to capture the Black king (and win) before Black could capture the White king.
Therefore, it makes sense that a pinned piece should also be able to defend another piece from the enemy king.
