People feel differently about resigning. A lot of chess students are also taught by their chess coach to never resign in a rated tournament game. Of course, titled players resign all the time, but the implication is that this level knows when to resign, but at the lower levels, they are better off playing it out.
I don't know if your 1000-level opponent has a chess coach or not, but this is one reason they may not have resigned. Another reason might just be it is hard for people to give up in longer time control games (as OTB usually is).
If you really believe your opponent should have resigned long ago, then it is your game to play and if you want to underpromote a bunch, then that is up to you, but personally, I probably wouldn't risk it in a rated game. When I'm in a similar situation to you, then I just try to checkmate as efficiently as possible and this is still giving me valuable practice.

I don't know what the time control is here, but the two ratings shown (1007 and 1314) are levels similar to my own in various time controls. I *regularly* face opponents who believe I should resign but then they don't know how to checkmate with a rook and a king so we end up drawing. I only mention this to say that, if I have time, I'm going to play it out and see if my opponent knows how to checkmate me.
UPDATE: I was given a warning (poor sportsmanship) for promoting to knights in another official tournament so I won't be doing that again.
I probably shouldn't have made this forum because I was in the wrong here. Also thank you everyone for your thoughts.
