My correspondence chess compared to my blitz, bullet, and standard live chess ratings are quite different.

I feel like I can play much better (so can anyone) given the time to think through each move and when I play live, a lot of times I get really impatient and do moves which I regret right away. But still there is almost a 300 points difference in between my live and CC chess ratings. Which would be more accurate? I have a strong feeling that my CC chess is a inflated, but is it by a lot?

For example my live chess average is around 1500 while my CC is around 1800. What would my tournament rating be? I just want to know around what level of play I am at. For live chess I play either 5, 10, or 15 minutes.

There are two different ratings because of the two different types of play.  Naturally live chess is lower because you are time pressured into responding with limited thinking time, while corespondence chess gives you plenty of time and you can actually study moves before making a play.

True but ratings are relative to your opponents. So in live I may have time pressure but so does my opponent. In correspondence chess I have lots of time, but so does my opponent.

If you play on "playchess.com" you will notice that a lot of players correspondence rating is above 1900-2000 while their blitz rating (3 to 5 min) is a mere 1500 or 1600,

No surprise there.
The only people who i know (in reallife) who´s long game and blitz rating is about equal (2200 - 2400) are the people who have been studying and playing chess in tournaments since age 7.

Having probably played about 40 000 or more games in their life, means that they know how positions will evolve and how the tactics work by intuition.
While us everyday Joe´s need to think things through before we move.

I can also tell you that i´ve seen people who´s  blitz rating is above 2000 and long game rating is below 1800.
So it is different for pople.

The main reason why peoples blitz rating is lower is because they just can´t see the whole board and blunder pieces every second or third game;)

Your live chess rating is more accurate and closer to what your "tournament" rating would be (if you mean over the board tournaments like FIDE).  Most people on this site have CC ratings far above their turn-based.

Which one should I use, bullet, blitz or standard

Standard would be the closest, but it can still be a little off because standard live chess is anything 15 minutes for each side (G/15) or longer.  When you say "tournament rating" if you  mean as in FIDE tournaments the time controls are much longer than 15 minutes, for example G/120.  On the internet it's very difficult to find players willing to play that long although there are some 45/45 groups out there (G/45 with 45 second add on).

Blitz and bullet can't really compare in the same way.
