Sacrificing a minor piece for two center(ish) pawns

Quite often I got the possibility to trade off a minor piece for two (center) pawns. In theory this seems not so bad to me because it helps controlling the center and you got all your pawns to build a strong structure. Yet I hardly see this happening so its probably not very sound to do. Why not? Doesn't the advantage of the center compensate for the 1 point loss?

Still curious if this can be a sound tactic or always stupid because you lose material..
