They would have to have something to bargain with first. Sadly. the world can probably get along fine without grandmaster chess.
Grandmasters are lucky that a few people have the wherewithal to support their playing this game.

But what about the prizes? Men should have the same winnings as women, but right now it seems that women are more regarded and recieve better prizes. I think there is so much to bargain with.

I think you have that backwards. As far as I know most open events have larger prizes than women only events.
For example the 2013 Women's World Championship had a 200,000 Euro prize fund. The Men's Champtionship had a 2,650,000 Euro prize fund.
Why are there no unions in chess? There should be a union representing chess players across fide and all federations. What would kirshan do if players and officials went on strike? There be no championship match until demands are met.
