She has been beating me this last game we have setup on 3 day moves. i see a checkmate with a back rank rook. should i take it even though she is up like 17 points in pieces on me? or should i act like i dont see it....?

Erm, askhually 🤓🤓👆according to my calculations, a race is categorizing a group of people which means that categorizing people who are born in Italy is actually a race. And George can still be Italian while being George. 🤓🤓🤓
When it comes to letting anyone win the answer has to be no. Like already mentioned they would feel deceived and it could wreak the whole dynamic and enjoyment of playing. The better player likes playing because they win and it gives them some practice, the more inexperienced player is keen because they are up against a better player so keep playing and the first win will be a big achievement. I always dreamed of marrying a snooker player. Someone better than me so I would never get tired of playing her. Ces't la vie.
Specify before the game if there is advice/takebacks so you can point out bank rank mates and other obvious blunders but bear in mind it can easily overload them so give them the option before a game to choose if they are playing with help or without help.
No, you shouldn't let her win imo. If you respect her you should play your best. I give my lady queen odds when we play to make it more fun for us and it works out.

When playing a practice game against a beginner, I often let them take back no more than 3 moves and I also tell them why their move was a blunder by costing them a piece or a pawn. Strategic errors like early Rook pawn moves, premature Queen moves, moving a piece multiple times in the opening for no good reason, etc. are allowed to "stay". With the more serious kids I work with, I encourage the recording of moves even though I record them myself so as to acclimate them in doing so as this is a tournament rule.
