You get non-equivalent evaluations even in symmetrical positions. For instance, try 1.e4 e5 vs 1.e3 e5 2.e4.
I decided to test something out

Normal Italian game
Evaluation number is +0.18
^
Flipped Italian game (still legal)
Evaluation number is -0.13
But not -0.18
