I have a favorite that I've lovingly named the Gluchetto. Queen checks, blocked by pawn, knight takes pawn, opponent can either take knight with pawn allowing queen takes rook, or can ignore and knight takes rook.

I think interference tactic is cool and usually harder to spot than pins and forks
I still like Greek sacrifice the best
