Why aren't more time controls offered, such as moves per amount of time? It would be interesting to play something like 40 moves per 15 minutes plus 10 minutes sudden death, etc.

Chess.com could offer infinite amounts of time controls, but what is the point. You would end up waiting days to find someone to play with who wanted the same.

Play in over the board tournaments.  You get time controls like that.  For example, 40 moves in 2 hours followed by sudden death in 30 minutes, or 40 moves in 90 minutes followed by sudden death in 30 minutes with a 30 second increment per move!

Makes sense and it was one of the things I considered as a negative for having too many time controls. It might be harder to get games too frequently. But then, there are so many different chess variants that people enjoy and apparently people get games. It would be interesting to try hourglass (but only as a lark) but I think that the so many moves in so many minutes plus sudden death is a serious time control that could be considered.

Multiple time controls are typically for very long games, which aren't popular online for various reasons.
